Japanese Boys Exchange Students March 7-21

PeopleLink is looking for families to host Japanese students (boys ages 13-15) in their homes from Wednesday, March 7 - Wednesday, March 21. PeopleLink, a non-profit, educational organization is still working on the student's daily schedule. PeopleLink will reimburse host family $20/night. These are the four basic responsibilities of the host family:

To provide conversation with the students and allow him to participate fully as a family member
To provide the student with a bed (a separate room is not necessary)
To provide the student with meals
To provide transportation to and from the Study Center (in Roseville, TBD)

My name is Lindsay Hanrihan, and I'm the Special Events Coordinator for MOPS at Sunrise Community Church. We are planning a night out on January 22nd for the MOPS community in the greater Sacramento area. We'll have a guest speaker, dessert and fellowship! Bring your Moms, Aunts, friends etc...this event is for EVERY woman! We'd love for your group to join us!

We are going to be hosting a special night with Karen Hossink, author of "Confessions of An Irritable Mother." She's going to teach us how to recognize God's presence in the mundane and frustrating moments of our lives and discover that we, too, can find joy.

Stuffed Bell Peppers Recipe

I told Karen I would post this recipe here. Its super healthy and very yummy! My notes have have an * before them. Its better with parmesan cheese sprinkled on when you serve it, but that makes it less healthy ;) Hope you like it. -Carly

TURKEY AND RICE STUFFED PEPPERS
Prevention’s Ultimate Quick and Healthy Cookbook
Prep time: 15 min Total time: 1 hour

5 large red bell peppers (or mix of red and yellow)
2 cups water
½ cup long-grain white rice
¾ tsp salt
2 tsp olive oil
1 lb lean ground turkey
1 med onion, chopped
2 garlic cloves, minced
1 ½ tsp dried thyme *I used TJs 21 Seasoning Salute
¼ tsp black pepper
1 lb fresh spinach (I used baby spinach), coarsely chopped
½ cup dried currants *I forgot the currants and it was still delicious
¼ cup chopped parsley *I also forgot parsley this time, still delicious :)

1. Preheat oven to 350. Bring large saucepan of water to boil over high heat.
2. Meanwhile, cut off and discard the tops of 4 bell peppers. Seed the peppers, being careful not to puncture them. Seed and dice the extra bell pepper; set aside.
3. Blanch the whole peppers in the boiling water for 2 minutes, or until slightly softened. Drain the peppers, then stand them upright in an 8 x 8-inch baking dish; set aside.
4. In a medium saucepan, combine 1 cup of the water, the rice, and ¼ tsp of the salt. Cover and bring to a boil over med-high heat; reduce the heat to medium and cook, covered, for 15 to 17 minutes, or until the rice is tender and the liquid is absorbed.***I used brown rice this time so I cooked the rice first and then did steps 1-3, 5-7.
5. Meanwhile, in a large non-stick skillet, warm the oil over med-high heat until hot but not smoking. Add the turkey and sauté for about 3 minutes, breaking up any clumps with a spoon. Add the onions, garlic, thyme, black pepper, and remaining ½ tsp of salt, and cook for about 3 minutes, or until the onions are softened.
6. Add the diced bell peppers, spinach, currants, and parsley; cover and cook for 3 minutes, or until spinach is wilted. Remove the pan from heat. *I added the spinach last, and literally had to smash it down to fit it all under the lid! After it wilted it fit fine – use the largest skillet you have because it will be very full by this point in the recipe.
7. Fluff the cooked rice with a fork. Add the spinach mixture to the rice and stir to combine. Spoon the rice mixture into the bell peppers and bake for 15mins. *If you cannot fit all of the mixture in the peppers, save the extra and spoon it into the pan around the peppers. My kids thought the bell pepper as bowls were cute, but didn't want to eat them. So I just spooned the extra mixture surrounding the peppers into a bowl and sprinkled parmesan cheese on it and they ate it with a spoon.

Local Moms Create Their Own Toy Stories
Just Between Friends helps moms find new homes for beloved toys through children’s consignment

Like Woody, Buzz Lightyear and Slinky Dog, countless quality, name brand toys are sitting around area homes no longer being used or played with. But, there are just as many local homes, with younger children, who would be more than happy to give a gently-used toy a treasured place in their toy boxes. Just Between Friends (JBF) will be an important part of tens of thousands of new toy stories this fall.

“Many parents feel they cannot afford name brand toys that are made to last because they cost more,” said Shannon Carter, coordinator of the Just Between Friends Community Children’s Consignment Sales Event in Sacramento. “However, Sacramento-area parents are embracing Just Between Friends because they can find exceptional bargains on the hot items their children want and need. In addition, they are helping other local families who are recycling unused and outgrown items from their growing families.”

The beauty of JBF consignment events is that we inspire families to take a good look at their homes twice each year and to recycle and repurpose those items which no longer have a use in that family, but still have significant value and life left in them for a second home. It’s a fact that toys stored for any amount of time will be at risk for things like battery corrosion, pieces that get misplaced and electronics that are adversely affected by heat, cold and moisture. JBF offers families a convenient alternative that puts money in their pockets and increases the useful lifespan of countless children’s items every season.

Just Between Friends will offer three fall/winter community children’s consignment events: Sacramento, August 27-29; Folsom September 10-12 and Roseville, September 24-26.

“Toys generally sell very well at Just Between Friends,” said Jill Mitchell, coordinator of the Just Between Friends events in Folsom. “We have parents who buy new toys to give as gifts; we’ve got grandparents who purchase items to have at their homes for when the grandkids come to play, and even daycares that are looking for affordable, but sturdy toys to replenish their play rooms. Consignors (sellers) make up to 70% on each sold item and Just Between Friends offers the opportunity to sell toys, clothing, baby equipment, outdoor playground toys, books, DVDs and pretty much anything that has to do with raising children. Volunteers, who run every aspect of each event, shop the sale before the public. Shoppers who sign-up on the JBF mailing list for each sale will receive a free admission coupon the week before each event.

A girlfriend of mine teaches swim lessons and I would HIGHLY recommend her. You can also get a recommendation from Karen Asche or Pam Lawley in our MOPS group - all of their kids took lessons with Callie last summer. She has many years of experience and she is great with kids. She only teaches for 1 two-week session each summer, so if you're interested let her know as soon as possible. She teaches in Granite Bay. Registration starts TODAY for the Fall 2010 semester! We hold spots based on a first-registered-first-served basis, so register as soon as you know that you will be able to join. (We max out when a childcare room is full - moms who do not need our childcare program are always open to come!) To hold your place we need to have both a completed registration form and at least half of your payment. Registration forms are available in the church lobby or by emailing creeksidemops@gmail.com. You can pay your registration fees with a check written to Creekside Church ("MOPS Fall 2010" in the memo) or cash to the church office. We are still confirming the process of paying online, so stay tuned for that...

Homemade Spa Bath Products

Below are the bath products we made at our last meeting. Please also view the bottom for some other fun products!

Homemade Milk Bath
(thanks toAngela Glover!)
1/2 cup powdered milk
1/4 cup Epsom salts
½ tbsp. baking soda
½ tsp. cornstarch
few drops of essential oil or 1/8 tsp. fragrance oil
optional: ¼ cup lavender buds
or dried flower petals

Natural Oatmeal Bath
(to relieve eczema/itchy skin)
½ cup ground oatmeal or Scottish oatmeal
½ cup cornstarch

Scented Bath Salts
1 cup Epsom salts
1/8 tsp. fragrance oil or few drops essential oil or dried lavender/flower petals
optional: 1 drop food coloring

Recommended Suppliers
Fragrance oil: Adamsboro Sundries (adamsborosundries.etsy.com)

California lavender buds: The Violet Patch (thevioletpatch.etsy.com)

Natural soaps: Oil and Spice (oilandspice.etsy.com or oilandspicebath.com)

Directions for mixing:
1. Add ingredients to Ziploc bag and seal
2. Shake to mix ingredients thoroughly
3. Pour spa product into small clear gift bag

**Tip**If scent is too light, add a few drops more of oil
If scent is too strong, add more Epsom salts

Other Bath Products to Try…

Chamomile-Mint Bath Salts
1/2 cup epsom salts
1/4 cup sea salt
2 bags peppermint tea (4 tsp leaves)
2 bags chamomile tea (4 tsp leaves)
1/2 teaspoon vanilla extract
1/2 teaspoon mint extract
Directions:
1 In a mixing bowl, combine both salts.
2 Add tea leaves and stir well.
3 Sprinkle both extracts over top of mixture and, with a wooden spoon, blend the extracts evenly throughout the salt mixture.
4 Fill a decorative jar with salts and close tightly.

Brown Sugar Scrub

1/2 cup of brown sugar 
1/4 cup of almond oil 
1/4 cup of liquid Ivory hand soap
 1/4 tsp of vanilla
Directions:
Mix ingredients and use as a body scrub/exfoliator.

Cheesy Ham and Hash Brown Casserole

• 1 (32 ounce) package frozen hash brown potatoes
• 8 ounces cooked, diced ham
• 2 (10.75 ounce) cans condensed cream of potato soup
• 1 (16 ounce) container sour cream
• 2 cups shredded sharp Cheddar cheese
• 1 1/2 cups grated Parmesan cheese

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish. In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

Pumpkin Chocolate Chip Muffins, SUPER EASY

• 1 recipe of carrot cake, dry ingredients only (I use 1 pkg. carrot cake mix)
• 20 ounces (3/4 large can, or about 1 1/3 cups is what I do) Pumpkin Puree
• 3 large egg whites
• 1/3 cup apple juice
• 2/3 cup chocolate chips (I like semi-sweet because the muffin is sweet already)

Mix everything but the chocolate chips together on low until moistened. Beat on medium for 2 minutes. Then scrape the sides of the bowl and fold in the chocolate chips. Bake in either a greased muffin tin or paper liners 18-22 minutes, at 350. (I prefer the greased tin because they stick to the liners, which I don’t like. But healthier with the liners).

Apricot Scone Recipe

INGREDIENTS:
-2 CUPS all-purpose unbleached flour

-1/2 CUP vanilla sugar** (I just used regular sugar.)

-1/4 CUP nonfat dry milk powder

-2 tsp baking powder

-1 tsp dried lemon/orange peel

-1/4 tsp salt

-1 CUP dried apricots (or blueberries, cranberries, etc.)

DIRECTIONS:
Stir together flour, sugar, milk, baking powder, lemon peel & salt. Layer the dried ingredients & the apricots (or other dried fruit) into one-quart canning jar, tapping gently on counter between layers to settle before adding the next. (I just plopped my dry ingredients on the bottom & the fruit on top.) Stores at room temperature for up to six weeks, or freeze for up to six months.

*You can also add shortening to gift jar by cutting it into dried ingredients before adding to jar. It has a shorter shelf life with the shortening added, though.

** To make vanilla sugar, fill one-quart jar with sugar. Split vanilla bean in half lengthwise & add both halves to sugar. Flavor gets better after a couple of weeks, & it will keep as long as regular sugar.

INSTRUCTIONS FOR GIFT TAG:
Stir together flour, sugar, powdered milk, baking powder, lemon peel & salt.
Cut in 1/3 cup shortening using a pastry cutter or fork until mixture resembles coarse crumbs.
Add ¼ cup water and one beaten egg
Stir until just moistened. Turn dough out onto a lightly floured surface and knead for 12-15 strokes, until nearly smooth ball.
Pat to 1/2'” thickness (circular shape).
Cut into desired shape & place 1" apart on an ungreased baking sheet.
Brush with milk. Bake at 400 degrees F for 12-15 minutes or until golden.
Transfer to a rack to cool slightly & serve warm. Enjoy!

Gearing up for a new year!

Hey everyone! MOPS is starting back up at Creekside on September 11th, at 9:00am in the church sanctuary. The cafe was getting a little crowded, so we decided to try out using the big room for our regular meetings. Childcare rooms remain the same, and you will see the big sanctuary doors open right when you walk into the lobby. You should be getting an email or a phone call from your table leader soon (if you haven't already) to touch bases and so you know who you'll be with this semester. When you come there will be a name tag at your seat so that you can easily find where to settle down and get comfortable.

This year's theme is called "Together on Planet Mom" and it aims to help women reflect and grow in the way that motherhood has changed ALL of their relationships in life. It should be really interesting and insightful (and probably guaranteed to make you both laugh and cry!) to hear about and discuss the topics we have selected for the Fall. Can't wait to see you all soon!

Our last meeting is this Friday, 5/15. A few reminders for the meeting:

Although this is our last official meeting for the (school) year, our group as a whole and your table may plan some summer events in order to stay in touch and see each other throughout the summer. This will be discussed at the meeting.

Friday is Moppets appreciation day! If you can, bring a card or have your kids make a token of thanks for the hard work of our childcare workers & volunteers. Your table leader should have a list of names of the wokers in each room if you don't know all of their names.

Pre-registration for the Fall begins this Friday. To hold your spot all you need to do is fill out a registration form and pay for half of your Fall semester cost. Our pre-reg prices for the Fall are $60 for mom alone, $70 for mom +1 child, $80 for mom +2, and $90 for mom +3. Registration is first come, first serve, and the only factor that limits registration is space in the childcare rooms. If you have a friend who would like to pre-register they can mail a check to the church with "MOPS registration" in the memo and email her registration info to creeksidemops@gmail.com. After May 29th the registration costs go up $2.

One of our co-coordinators (and founders of Creekside MOPS), Cynthia, will be moving to Nebraska this summer. If you would like to bring to the meeting a card or note of thanks and best wishes to her, that would be great!

In light of the economic crunch, etc..., I thought other moms might like to know that the Orowheat/Entemann's bread outlet on Auburn Blvd in Citrus Heights is freakin' awesome. My family LOVES bread, and I stop there about once a month on my way to work, spend $10-$15, and have bread/tortillas/bagels for a whole month. I just freeze the extras and thaw as needed. They also have donuts/coffee cake, etc...even at Winco, I would pay $3-4 a loaf for Orowheat brand, and here it's $1.99 a loaf. Just thought I'd share my little carb secret. -Jo

Happy Easter! Egg Hunt this Friday!

This Friday we will be having our annual Easter egg "hunt" at Elliott Park in Roseville. We will play at the park and then have 2 egg hunts - one for the little kids and one for older kids. There will be special eggs in the field that can be traded in for a special little prize! Please bring 1 dozen eggs filled with some sort of goodie (candy, stickers, tiny toys, etc.) for each child that will be participating in the hunt. Feel free to bring any siblings that are out of school for Spring Break, and bring filled eggs for them too.

Here are directions to the park as if you were coming south 65. Apparently its a little tricky to see the street signs, so pay extra attention and look it up on a map site if you want to have a better idea of where you're heading.

Spinach Brunch Dish from Stacey

Ingredients
1-1/2 cups shredded medium cheddar cheese
1 box frozen chopped spinach (thawed and well drained)
10 eggs
1/2 to 3/4 cup milk
1 package feta cheese with basil and tomato
1 tomato, sliced
1 box sliced Portobello mushrooms
1 onion

Need 9X13 casserole dish (sprayed with non-stick cooking spray).

Sauté onion and mushrooms together until onions are soft, add spinach (frozen) just to heat.

Whip eggs and milk together with fork. Add cheddar cheese, then pour on spinach mixture. Crumble feta cheese and sprinkle over the top. Top with tomatoes. Bake at 350 degrees for 40 to 45 minutes. Knife inserted in middle should come out clean.

10 minutes to prepare, 40-45 minutes to bake

--Have kids take their red wagon out and collect non-perishable food for food banks.
--Operation Christmas Child: have kids help with both filling boxes and delivering boxes to the collection center.
--Go online to Compassion International, look for the children that have been waiting over a year and let your child pick one out to send $30 a month to. They will send you pictures of the child you support.
--If your child has really long hair and wants to cut it, encourage her to donate her hair to Locks of Love. Explain who the kids are that benefit from this organization and why they need the hair donations.
--Have them choose some toys to give to kids who don't have many (kids at a domestic violence shelter, for example).
--On holidays, serve food at a shelter together.
--To give back to the community, pick up trash at a park before you start to play.

Fun and free! Mother Goose on the Loose

I took my kids to the Mother Goose on the Loose program today at the Roseville Downtown Library (by Royer Park) and it was a lot of fun! My kids loved it and the teacher was great. For now it is on Thursdays from 10:30 - 11:00 (I believe the schedule changes at the end of February). The teacher told me that she also does a playgroup and Mother Goose class at the Riley Library, although I can't find the exact day/time right now. If anyone is interested in going with me next Thursday to the downtown program, let me know.

Placer County Libraries (includes Rocklin and Granite Bay) also do storytime and Mother Goose on the Loose programs, days and times are listed HERE. If that link doesn't work you can go to http://www.placer.ca.gov/Departments/Library/Storytime.aspx.

"Park" Day Tomorrow at Galleria Mall

Tomorrow morning we will be meeting at the mall for a little winter "park" day. We will be at the old play place, near Sears and Macy's from 9:00am - 10:30am. It is the play place that is nearest to the Starbucks kiosk. Depending on how it goes, we may decide to migrate over to the new play place (in the newer branch of the mall, near the baby and maternity stores) after a little while. Hope to see many of you there! I will be there with my crazy kids.

Recycle your Wrapping Paper and help the Exploration Center make the Ideascape a reality.

Bring in your used wrapping paper, bows, ribbons, cards, gift boxes and bags after the presents are revealed and we will turn your trash into treasure! You will help reduce the chill of winter when the U.S. Green Fiber company partners with the Roseville Environmental Utilities Department to make home insulation. It will also help the Exploration Center to raise funds to create their outdoor Ideascape.
Bins will be available for your wrapping materials drop-off from Friday, December 26th – Monday, January 5that the following three locations:

Recipe: Holiday Favorites from Erin

"Not yo' momma's sugar cookies" or Rose's Sugar Cookies
1 cup Sugar
1 cup powered sugar
2 cubes butter
1 tsp. vanilla

4 1/2 cups flour
1 tsp. salt
1 tsp. cream of tartar
1 tsp. baking soda

Cream first 4 ingredients. Combine flour, salt, cream of tartar, & baking soda in seperate bowl. Then mix together with creamed wet mixture. Roll in balls size of walnuts. Place on ungreased cookie sheet. Flatten with bottom of glass dipped in sugar. Bake at 350 for 8-10 minutes. Mmmm yummy!

PUMPKIN PIE CAKE
(this is Mikala Hennings recipe....so good,
great alternative to pumpkin pie!)
1 Lg. can Pumpkin Mix-around 32 oz. (not pumpkin pie mix)
1 can Evaporated Milk
4 Eggs
1 1/2 cups sugar
1/2 tsp. ground ginger
2 tbl. cinnamon

2 cup chopped walnuts or pecans (or plain granola misxed with a little brown sugar for those who like life nutless!! ha ha ha, I can't stop laughing!)
1 box yellow cake mix
1 cup butter

Mix first 6 ingredients in large bowl. Pour into ungreased 9x13 dish. Layer yellow cake mix on top of pumpkin mix, then sprinkle nuts or granola & pour melted butter over top. BAke @ 325 for 1 hour & 15-30 min. SO GOOD!!

It would also be appreciated if you bring any teas (doesn't need to be a whole box - just a few bags of your favorite teas would be fine) and a note, verse, poem, or child's drawing for our craft. We will be exchanging cookies with one another, as well as contributing cookies and the other goodies to a basket for an elderly person.

Your cookies do not need to be homemade or made from scratch, store bought is fine. Just bring something you like!

RECIPE: Cynthia's Caramel French Toast

CARAMEL FRENCH TOAST
Arrange in a 9x13 pan…
8 slices of French Bread or Challah Bread (thick)

Melt together…
1 c. Brown Sugar
1 Stick Butter
1T. Corn Syrup

Beat together…
Six eggs
1 ½ cups milk
1 t. vanilla

Pour milk mixture over the bread. Pour caramel over everything. Bake @ 350 degrees for 30-40 min.

**On Saturday I served this with a berry compote—very yummy! One package of Trader Joe’s mixed berries, ¼ c. sugar, ¼ c. cranberry juice—simmer to reduce slightly. It was very yummy on the side or as a berry sauce.

Recipe: Monica's Favorite Granola

HOMEMADE GRANOLA
Mix together in large bowl:
4 cups (or more) oats
1 c. wheat germ
1 c. chopped almonds
1 c. shredded coconut
1 c. unsalted sunflower seeds
½ c. sesame seeds (these have a very strong taste and I actually prefer it without them)
¼ c. sugar (this is optional, it just makes it sweeter)
Combine separately:
In a saucepan, heat ¾ c. oil and ¾ c. honey until runny and easy to mix. Add 1 tsp. vanilla or almond extract. You can use pure maple syrup in place of honey and this does not need to be heated.
Pour oil/honey mixture over other ingredients in large bowl. Mix thoroughly. Pour into 2 large glass baking dishes and bake at 300 degrees for 15 minutes. Take it out and stir and then bake for another 15 minutes. Take it out again to stir, and then bake for an additional 15 minutes.
After baking, pour everything back into the large bowl and add 1 cup of raisins or dried cranberries. Mix together. Now let it cool completely and then store it in a ziplock bag.

RECIPE: Ham Asparagus Strata

This is the HAM ASPARAGUS STRATA from the Better Homes and Gardens cookbook. I have used it often for brunch parties and last year it was a big hit on MOPS mornings. Just in case you don't have a go-to egg dish, this one is yummy and pretty healthy. We also like it for dinner in my house. -Carly

4 English muffins, cut into bite-size pieces
2 cups cubed cooked ham (chicken okay too)
2 cups cut up fresh aspargus or broccoli (or 10oz pkg frozen)
4 oz Swiss cheese, cut up
4 beaten eggs
1/4 cup sour cream
1 1/4 cups milk
2 T chopped onion
1 T dijon mustard

In a greased 2 quart square baking dish spread half of the English muffin pieces. Top with ham, asparagus, and cheese. Top with the remaining English muffin pieces.

In a bowl whisk together eggs and sour cream. Stir in milk, onion, mustard, and a pinch of black pepper. Pour evenly over layers in dish. Cover and chill for 2 - 24 hours.

Bake, uncovered, in a 325 oven for 60 minutes or until the internal temp reaches 170. Let stand 10 minutes before serving.

I haven't been to the Roseville sale, but I've been to it the last two times downtown at the Convention Center and got tons of clothes for a bargin price ($3-$12 for Gymboree, Gap, Old Navy, Nartjie, Jaine and Jack, etc. sets and individual pieces). They also have furniture, toys, strollers, swings, and pretty much anything else maternity, baby, and kid. I think I'm going to go on Friday morning if anyone's interested. -Bethany
